About Tuber melanosporum
The black winter truffle (Tuber melanosporum) is one of gastronomy’s most prized treasures. Harvested between November and March, it grows in symbiosis with oak roots. Its firm dark flesh reveals an intense and persistent flavour, combining earthy woodland notes with refined depth.
Usage advice
To preserve its delicate aromas, avoid prolonged or high-temperature cooking. It is best used fresh, added at the end of cooking or infused into cream, butter or other fats. We recommend approximately 10 grams per person, or around 10% of the infused fat content.
For optimal storage, wrap in a damp cloth and keep refrigerated.
Delivery Information
Truffles are shipped from Monday to Thursday morning in refrigerated trucks (ChronoFresh) to ensure optimal temperature control throughout transport.
Fresh truffles are vacuum-sealed with absorbent paper to protect them during shipping.
Labels are applied by hand as a mark of additional quality care, and each parcel is carefully prepared.
