About Tuber brumale
Harvested by hand in winter forests, Tuber brumale is a true gastronomic treasure. Its tougher, more rugged skin contrasts with the refinement of melanosporum. Inside, its pronounced marbling reflects its maturity and bold character. Its aroma blends earthy forest notes with hints of hazelnut, offering a distinctive culinary experience.

Usage advice
Unlike Tuber melanosporum, Tuber brumale is heat resistant and perfectly suited to high temperatures and long cooking times. It can be used throughout the cooking process or infused into cream, butter or other fats.
We recommend approximately 10 grams per person, or around 10% of the infused fat content.
It pairs beautifully with eggs, pasta, meats, fish and vegetables.
For optimal storage, wrap in a damp cloth and keep refrigerated.

Delivery Information
Truffles are shipped from Monday to Thursday morning in refrigerated trucks (ChronoFresh) to ensure optimal temperature control. Fresh truffles are vacuum-packed with absorbent paper to protect them during transport. Labels are applied by hand as a mark of additional quality care, and each parcel is carefully prepared.
